So let's Talk about food??? The food we buy at the local retail store.  Have you ever read the labels... Have you ever wondered what half the ingredients are??? I do not have a complete list but what I do know is so many of them rob your body of nutrients, block absorption of minerals, have potential to attack you immune system and cause cancer... Hmmm that made me think... I want to try something better so I did I started to cook real foods... Yes many of my foods do still come from the store.. I live in a city.. so I have a limit to what I can and can't produce for myself.. But I do look for better quality, unprocessed food and I cook. I prepare meals for the week and I prep my lunches... This keeps me eating better than a hot deli meals or fast food.

One of my favorite things to make is Cheese.. I love to make cheese.. and it is easy!!!

Go to the store and buy

1 gallon whole milk not (ultra pasteurized) it can be ultrafiltered  I have been using Fair life

Or if you know a farmer you can do raw milk or goats milk...



2/3 cup Lemon Juice, 100% pure lemon Juice or enough lemons to squeeze (about 8)
2 tsp salt

optional
Herbs or spices or both.



Poor milk in stainless steel pan and heat slowly over med heat stirring constantly until it reaches 185 degrees 



Add lemon juice stir on heat 1 minute then remove from heat and let rest for 15 minutes



This is when the curds form and separate from the whey (yellow liquid) 


Line a colander with a cheesecloth or very fine cotton towel, I use flour sack towels. Strain the curds from the whey. I discard this whey due to it being heated to a high temp there is no health value in this liquid at this point.   I then let the curds rest a bout 5 min or so till I can squeeze out any additional whey.. The curds will be hot so be careful, once the curd cool a bit I pull all the corners of the towel together and wring out as much whey as possible. Once the curds look dry... Sprinkle with 2 teaspoons salt and add what ever spice you want.




ring curds tightly in towel place on a bowl in a bowl twist towel to make knot push into center of cheese and place a weight or bowl with rice on top to help farce out any additional whey.. place in fridge for two days to rest.


and Wola!! I made green onion cheese.. it was amazing


You can add what ever spices you want play with the recipe.. I love this cheese. I have even left it in curd added only salt and not pressed and ate like feta on my salads.
